Angel’s Share is a Imperial Stout aged in Bourbon barrels for 28 months and infused with vanilla beams.
It’s the tenth creation in our Barrel Works series, our barrel-aged beer program.
Brewing Process:
Angel’s Share is an exceptional beer, defined by its rich composition and meticulous brewing process. It uses a selection of English malts, chocolate malt, Golden Naked oats, caramel malt, and crystal malt, each contributing a unique dimension to the beer’s final profile.
The extended six-hour boil of these malts not only concentrates the flavours but also promotes caramelisation and Maillard reactions, intensifying the beer’s expression.
Fermented with neutral yeast to highlight the malt character, it sets the foundation for aging that adds depth to the final product.
The resulting beer is aged for 28 months in Kentucky Bourbon barrels at the darkest corner of our cellar. This long maturation process imparts unparalleled complexity and multiple layers of flavour.
To finish, Angel’s Share is rounded off with an infusion of vanilla beams from two distinct origins: Madagascar vanilla, which brings floral and caramel notes, and Ugandan vanilla, adding earthy, spicy, and chocolatey nuances.
Tasting Notes:
As soon as you bring it to your nose, you’re hit with intense aromas of aged bourbon, complemented by notes of wood, chocolate, and vanilla. These dark aromas evolve and become more pronounced as time pases the the beer gets warmer at the glass.
On the palate, the beer is dense and creamy, with a silkiness added by the vanilla. It exhibits multiple layers of flavours: caramel, chocolate, raisins, and liquorice. Each sip is a harmonious and profound revelation of flavours.
Angel’s Share is the term describing the amount of alcohol that evaporates from barrels during the aging process. It’s as if, in their mystical seclusion, the barrels offer a sip of gratitude to the angels in our cellar, an invisible tribute to patience and dedication.
